Ingredients
For the Pancakes
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
2 large eggs
1/4 cup melted butter (plus more for cooking)
1 teaspoon vanilla extract
For Serving
Maple syrup (warm)
8–10 slices crispy bacon
Instructions
In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract until smooth. Pour the wet ingredients into the dry and stir gently until just combined—some small lumps are okay. Do not overmix.
